Traditional cuisine makes extensive use of the spiny Sardinian artichoke, violet, from tender and tasty leaves, tapered shape and a marked and unmistakable taste. In the island's cuisine artichoke is treated in an infinity of ways, and appears both raw (excellent with the mullet roe), it is cooked. The stew is cooked, grilled or steamed, in soups and risottos; is fundamental ingredient in omelets and many meat dishes.
It has a great response even in the canning tradition, where it appears in the oil preparations, which are one of the most sought starters, to be added to the more typical mix of land, next to the ham, sausages, cheese and olives.

It took twenty years of experimentation, with sometimes surprising results that gradually persuaded us to share our creations: marmalades, jams, compotes and salalizie. Speak of delicious fusion of fruit and vegetables to enjoy with some canonical pairings: pecorino cheese, mullet roe, seasone goat cheese.
If we talk of jams and marmalades: we use only selected Sardinian fruit, mixed in different quality characteristics of different places in Sardinia, to create combinations from ever new taste.
The salalizie: it is composed of cleverly combined fruit and vegetables in a balanced marriage of sweet and savory flavors of sour base.
