Feautures:
The Fiore Sardo DOP is a sheep's full milk cheese, of hard grain. The milk is brought to 33-35 ° C in a copper and supplemented with lamb rennet; after the breakage is left in the boiler where it get reassembled. It gets broke again and placed in steel shapes that give it its characteristic convex and rounded sides.
After the purging, the forms are scalded with boiling water, rubbed in the pickle, therefore, put on ripening in a light smoked. The ripening period is about 15 days, while the aging varies from 6 to 12 months.
The rind is hard, smooth or rough and oily, for a natural cappature. The color goes from pale brown to almost black, depending of smoked. The grain is hard, tending to the crumbly, white or straw, depending on age, with regularly distributed and fine holes.
During the processing phases, the cheese is placed into steel molds, which give the characteristic shape of the "mule back."
Serving suggestions: To serve with crusty white bread or walnut bread. When the chees is quite young its suggested to be served as table cheese, possibly coupled with fresh fava beans; it can be fried or used in the preparation of fondue for dress potatoes, malloreddus and any other pasta, like potatoes gnocchi.
The hard cheese grated on pasta al burro or in the vegetable sauces, soups and polenta. It goes further to tomatoes salads and onions and is esteemed for preparing pesto sauce.
Coupling: When young, the Fiore Sardo Dop, it goes well with white wines of moderate body such as Vermentino di Sardegna, the Alcamo, San Severo or Nuragus. If the cheese is medium-aged white intense wines can be proposed, such as those aged in oak barrels, like some Tuscan Chardonnay or Verdicchio, or like some exemplars of Murales wines. The forms quite seasoned require strong bodied red wines like Cannonau di Sardegna, Girò and some Carignano.
