It is a cheese that is produced exclusively from goat milk. Its production technology has been in some way borrowed from that of the PDO Sardinian pecorino cheese, traditional cheese par excellence of the island, which also retains the shape. It can therefore be said that the goat in Sardinia has very ancient roots and face a full part of the Sardinian cheese-making tradition. The population of the goat breed Sarda is characterized by the production of high quality with high levels of protein and fat milk, especially if it is related to the difficult environment in which the Sardinian goat is induced to live in Sardinia.
