The "Su Zichi" company, Deriu and Dettori, has been present for almost 20 years in Bonorva, Logudoro territory, and is a leading company in industrial and handicraft bakeries.
Specializing in the production of Su Zichi, typical Sardinian bread of Bonorva, the bakery produces typical Sardinian products for the food and catering sectors.
The IGP brand was awarded to Zichi of Bonorva. Protected Geographical Indication.
The company produces Su zichi, a traditional bread of the Bonorva village, whose recipe is handed down from generation to generation. It is maade with simple, genuine and carefully selected ingredient: wheat flour mixed with hard wheat, salt water and natural yeast.
This product wants natural leavening and baking in over 300 degrees. Its shape is circular, 25-30 cm in diameter and 1 cm in thickness, it is produced both in soft and tough version. Soft bread is preserved for about a week, while the hard in moisture does not last for 6 to 10 months without losing quality. We, for obvious logistical needs, serve the hard, long-term preservation.
The "Su Zichi" company dominates the production of such a typical bread.
This is a perfect product for cooking and preparing first courses. Su Zichi is cut into pieces of about 4/5 cm, thrown in salted water in boiling, drained and seasoned in the most diverse ways.
In contrast to other types, which contribute to the formation of a bread dish, the main quality of the Zichi is to keep baking in an extraordinary consistency.
It does not slip easily, presenting itself as one of the most extraordinary dishes of Sardinian cuisine. We suggest optimum cooking for 10 minutes.
