This goat cheese is commonly produced in Sardinia from December to July, especially in Gallura, in Ogliastra, in Sarrabus and Sulcis.
Feautures:
This goat cheese of Monte Accas has a truncated cone or cylindrical shape, the weight ranging from 3.5 kg to a kilogram and a half. The rind is yellow to three months while it gets dark brown after 6 months of aging. The texture is white or pale yellow, the flavor is intense and its spicy increases with maturation.
While the processing, the uncooked goat milk is brought to 36° C through the use of direct heat in tinned copper boilers. A solution of goat rennet is added to the milk, that makes reaching the coagulation in 25-30 minutes.
The curd is broken with a tool called "chiova" or directly by hand, until the granules of the cheese mass reach the size of a grain of rice. The curd so fragmented deposits in the bottom of the boiler under the serum to form the dough. Always under the hot whey the subdivision of the dough occurs, which is thus transferred in baskets, generally half conical shape, which it gives the characteristic shape, similar to Fiore Sardo.
The goat cheese is salted by immersion in brine and salt is also sprinkled on the face of the outcrop shape. The salting time depends on the size of the shapes.
Traditionally the maturation begins in the same resting-room of the shepherd, where the shapes are left to dry on a particular “canicciato” (a wicker) where it undergoes a light smoking.
The cheese aging takes place later in the basement cellars, usually belonging to the family of the shepherd. Both the technique of pasteurization that the size of this cheese might be subject to some variations.
