Karinniu is a Sardinian white wine produced from native white grapes
cultivated in the Sarcidano, Santu Teru, in limestone-clay soils a hill setting, ca. 400 m asl. The grapes grown without chemicals of synthesis, collected by hand and destemmed, ferment naturally without the addition of selected yeasts. The wine refined in tonneaux not first passage, not filtered.
The dialect name "Nascu" derives from the Latin "Muscus" which means moss, to underline the unmistakable scent that is particularly felt in the old wine a few years. It shows a very elegant and warm amber color, extraordinarily intense and enveloping of honey, overripe fruit, dates, figs, candied orange with a final sun-drenched Mediterranean scrub woods and musk.

The grapes are harvested and processed in the early hours of the morning, suffering a de-stemming followed by gentle pressing, resulting in a juice followed by a sedimentation cold static The must is left to ferment with native yeasts own grapes for a period of about two weeks at a low temperature, leaving a small residual sugar Aged in tonneaux of 2° passage, not filtered |
