This Sardinian wine is made from a single vineyard grapes 40 years old, with a production of 45 q.li Ha

Vinification

The red wine is made in the fermenter Ganymede, for about 9 days, at a temperature of 28 degrees. Taking advantage of the energy produced by the fermentation to make the pumping and the soft mixing on the pomace must, the extraction of flavorings and colorings without the aid of the mechanical pump is preferred. After about 4 months in stainless steel, the aging of the wine takes palce in French oak Tonneau with a capacity of 10 hl each for about 10 months.
