of returns, between herbs and ripe fruit, towards a decisive and clean finish that leads behind
itself a long mineral trail.
Curiosity
In the midst of the Second World War, skillful men are all at the front and in the countryside they work,
to survive families, both children and retirees. Production was quite limited,
given the available workforce, but nevertheless the government imposed the requisition of food.
The immediate effect was the birth of the black market. Consequently it was necessary to hide
the actual production of the various goods. As for the wine, which was exchanged in wooden containers
fifty liters, it was hidden in the countryside in the midst of shrubs; in Sardinia mainly
of helichrysum. The operation worked well in the cold period while in summer the wine acquired in addition to the perfume
of helichrysum a high alcohol concentration and a domineering bitter note. This became serious
problem since nobody wanted that product so bitter. Despite the commitment, it was not clear at the time
what had happened therefore we only exchanged smuggled wine in the cool months. Only
later it was understood that the phenomenon was caused by the conservation of wine in chestnut barrels whose wood
it is very wide, so that during the summer, due to the perspiration the water evaporated, the
alcohol content increased and the wine acquired the intense scent of the helichrysum plants in which it was hidden.
After the war and with the economic recovery in Sardinia, as in the rest of Italy, the
Vermouth fashion. When tasting it, Silvio Carta remembered what had happened with the contraband wine.
I understood that the difference was simply the addition of sugar. Hence it was born
the idea of producing Vermouth from Vernaccia on the basis of the ancient recipe, creating, in its kind, a
unique product in the world
