The dairy farm Su Grabiolu works exclusively raw milk, therefore not subjected to any heat treatment but simply heated in order to allow the cheese.

The milk is a valuable source of wood, the result of a unique bouquet of flavors that each herb essence, flower contributes to preserving the organoleptic and sensory determinants give the taste and aroma characteristics of the cheese.

The processing of raw preserves intact the scents that emerge slowly in cheese during ripening and maturation, giving intense sensations and unique, thus enhancing the pleasure of savoring the true flavor typical of that area. The result is a cheese with a rich flavor and unique, large and complex aromas and unsurpassed quality.

The use of raw milk involves more skill and attention in the processing. The Dairy Farm Su Grabiolu following this with great care and precision all the phases of the process ensuring maximum attention to cleanliness in the stable, the health of animals and their feed.

The maximum hygiene in the production, storage, and processing is a guarantee for the consumer and indispensable condition to produce a cheese quality.

The minimum ripening period of sixty days also makes it inactivate harmful microorganisms that may be present in the fresh product.
