The Fiore Sardo PDO is produced in Sardinia, according to ancient and particular techniques of craftsmanship. It's an hard cheese raw, made exclusively with whole sheep's milk, fresh, curdled with lamb or kid.

The grain is molded with special molds that give the forms to the characteristic "back of a mule" after a brief stop in brine, shapes are subjected to a light and smoked aging.
The average size is 3,5 kg, with light variations in relation to the technical conditions of production; crust from deep yellow to dark brown; white or pale yellow texture, more or less spicy taste, depending on the level of maturation; fat in dry matter: at least 40 percent.
The Fiore Sardo Dop cheese comes with all the guarantees of authenticity; excellent table cheese when used within the first two months of aging, great for grating when aged over six months.
The product may undergo slight variations of weight.
